素材と向き合い、余分なものを足さず、旨味の本質を引き出す。 そうして生まれたのが、麺屋 猪一の「出汁そば」です。 目指しているのは、時間が経ってから、ふと思い出される食事であること。 味わいだけでなく、その時間ごと、静かに記憶に残る瞬間です。 味、空間、サービス。

This journey led us once again to the culture of dashi that Japan has long cherished.
By facing each ingredient with sincerity, adding nothing unnecessary, and drawing out only the essence of umami,our dashi soba was born. What we aim to offer is a meal that gently resurfaces in memory,
long after time has passed—not only through its flavor, but through the quiet moments that surround it. Taste, space, and service.
